Big Mama's Orange Blossoms!

It's no surprise that it has taken me yet another snow day to sit down long enough to write this post!
But finally, right before your very eyes,
is the easy-to-follow tutorial to help you make
Big Mama's Orange Blossoms!
Now, I know that they might just look like some type of cornbread muffin,
but I promise you that they are
melt-in-you-mouth good.
We're talking delicious.
Like little orange glazed donuts or something.
So try them out and tell me what you think- I know you won't be disappointed!

 Cupcake Ingredients:
1 box Moist Supreme vanilla cake mix
1/3 cup orange juice (you can squeeze the oranges that you zest)
1 box vanilla pudding
Zest from one orange
4 eggs
3/4 cup vegetable oil

Glaze Ingredients:
4 cups confectioners sugar
1/3 cup orange juice
Zest from one orange
3 tablespoons vegetable oil
 3 tablespoons water

-Preheat the oven to 350° F
-Spray miniature muffin tins with vegetable oil cooking spray
  1. -Combine the cake mix, pudding mix, eggs, orange juice, zest, and oil
  1. -Blend well with an electric mixer until smooth, about 2 minutes
  1. -Pour a small amount of batter, filling each muffin tin about 2/3 full
  1. -Bake for 12-14 minutes or until golden brown
  1. -Make the glaze while the cakes are baking. Combine the sugar, orange juice, zest, oil, and 3 tablespoons water. Mix with a spoon until smooth

-After taking the cupcakes out of the oven, turn them out onto a wire cooling rack
  1. -Using your fingers, dip the cupcakes into the glaze while they're still warm, and coat completely
  2. -Place back on wire racks with waxed paper underneath to catch any drips
  3. **Now try one right away while they're still warm and gooey!**

Those cakes look so sunny and cheerful. I bet eating these puts a smile on anyone's face. I have a linky party on my blog every week called "Sweets for a Saturday" and I'd like to invite you to stop by this weekend and link this up.
